Chicken Tikka Masala Pizza

Having grown up in Singapore, Indian food is a big favorite of mine. When I first moved to United States, I was so surprised that many of my friends never really had Indian food!

Indian food has always seemed daunting to me, though. The number of spices that must go into the savory, delicious dishes definitely kept me away from trying to cook an indian meal. Ever since I saw this recipe for Chicken Tikka Masala pizza on Rasa Malaysia, I have been DYING (absolutely DYING) to try it because the spice list looked pretty minimal, and it didn’t seem very complicated. I never got an opportunity to try it though, because the spice store I like to go to at Chelsea Markets ran out of garam masala the last time I checked. TC knew how much I wanted to find some garam masala though, so he got me a tin of the yummy, yummy spice as a part of my birthday present package :)

I changed some of the original recipe, but most of it remains the same. This looks long and hard, but it was actually a super quick dinner. It’s perfect for children because  Here is my chicken tikka masala pizza adventure (recipe below):

  • 4 garlic naan flatbreads from Trader Joes (you can really use any base though)
  • 1 chicken breast
  • 1 jalapeno, minced (we like it spicy!)
  • salt to taste
  • 1/4 onion, thinly sliced
  • generous helpings of shredded mozzarella
  • generous helpings of cilantro or chinese parsley, coarsely chopped

Marinade

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground garam masala
  • 1 teaspoon minced fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons plain yogurt
  • Pinch of cinnamon

Tomato Sauce

  • 4oz tomato sauce
  • 2 tablespoons plain yogurt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garam masala
  • A splash of cream
  1. Cut the chicken into bite-sized pieces and marinade for an hour.
  2. A few minutes before the chicken is done marinating, fry the spices in the tomato sauce in a small stockpot until fragrant. Then, add the tomato sauce and yogurt and allow it to simmer.
  3. Preheat the oven to 425 degrees fahrenheit.
  4. When chicken is done marinating, stir fry the chicken with onions until the chicken is cooked and the onions are translucent but not too soft.
  5. While the chicken is frying brush olive oil onto the naan flatbreads.
  6. After the sauce has thickened, assemble the pizza! Spoon sauce onto the flatbreads and top with mozzarella. Add the cooked chicken and then top with more mozzarella.
  7. Reduce the oven to 400 degrees fahrenheit, and bake for 8 minutes.
